Cooked up a batch of marinara sauce and mini meatballs today, therefore we had skettie and meatballs. I made enough sauce and meatballs to freeze to conquer another day in meal planning.
Butter Beans and Rice hmmm, I was out of bread.......bummer. My crystal ball says I will shop tomorrow.
I stopped buying bacon years ago when it became necessary to take a bank loan to buy it. I loved Jimmy Dean sausage and of course he died some years ago and I guess family sold the brand to some other source. The very first thing they did was to use sub par sausage in all their products like croissant and biscuit and sausage etc. Honestly a dollar store hot sandwich with sausage taste the same. I always would buy the big box of 8 egg and sausage biscuit or croissant sandwiches, it was great for a fast breakfast when I was working. Maybe that's a good thing since I have zero intake of fatty foods, no fried stuff at all. It didn't help my weight any but then most of us put on weight as we get old and we didn't have to eat to gain weight.
Crispy bacon is the only way to eat bacon, if I am going to eat bacon. It has be crispy like Cracklins or Pork Rinds, which is basically deep fried pork skin or pork fat.
My neighbors are true country folk. Just the other day they were telling me of slaughtering hogs and making pork rinds (and chitlins.) Harry showed me a video of it. The rinds are put into an empty cauldron and when the heat is turned on they render their own fat in which they fry. If I recall correctly, the rinds are then removed to drain, the grease is poured off, and the rinds are returned to the pot in batches to dry and finish. In reading recipes on the web, it seems that the rinds can first be air-dried and then fried in lard or oil. But the guy in the video and the folks around here render the fat from the rinds to fry them in. One would think that gives them the best flavor. Regarding crispy bacon: I agree, it's the only way to make it. I have no desire to gnaw on a piece of warm greasy fat.
I did not sleep well last night due to the sudden 2 day of overnight freezing then suddenly last night it was 61 in the am this morning. I was up at 4:30 having coffee knowing I was going to shop. I did shop at 8:30 and back home real fast crawled into bed and napped to 2:45 this afternoon. I have been eating since then, I devoured 4 blue berry muffins and later 4 slices of buttered toast and finally just a few minutes ago I ate a bowl of chicken soup, the cheap packaged type not can because I simply forgot the chicken noodle soup on my shopping list. I have to say those blue berry muffins were tops, two cats approved that message.
Yes like crispy bacon. Um you can have your brown sauce. Here we eat bacon with white gravy, and biscuits(not cookies) or toast. Hubby favors bacon and tomato sandwich sometimes. I like mine on toast with avocado..tasty.
I've never tried avocado. Never had or even seen white gravy (◔‿◔) I like my bacon on toast or in a sandwich.
I prepared egg noodles with chili and topped with some nice shredded cheddar cheese. Took a nice nap and jumped up before it got dark and toasted a few pieces of wheat bread with butter. I have two cats who love the buttered bread also, not a lot but they do look forward to eating a bite or two and I am more than happy to give them a little taste. Snuggie cat is not a toast man, which is surprising because he is the real chow hound usually playing clean up position and shining those empty dishes. Got rain coming tonight and some thunder storms so we are all now prepared to sleep tight. I also always feed the bathroom crew dry food at end of day and they are not picky about what brand of dry food I buy for them. When it starts raining I can hear them at night coming into the bathroom making all kinds of noise. Their mother comes over to have breakfast about twice a week.
20% organic beef-based protein shake and the last slice of dark chocolate pie. I just discovered that I have two packages of creme cheese so tomorrow I will attempt to use a brownie mix to make cream cheese brownie cake.
