Yum, everything y'all have been making/having sounds delicious. I cooked up some chicken tenders and white rice yesterday, then later, sauteed a mixture of green and red bell peppers with a tiny bit of minced onions. I ate that layered on top of one another last night, but I might make the rest of it in a fried rice later. I don't have any scallions, but I do have ginger, and also soy and oyster sauce. I just finished eating my last pastry. I'm considering making another dessert, but I haven't decided what I want to make yet. I thought I had enough lemons to make a batch of ricotta, but I only have two left, although they're big ones. I should sneak over late tonight and filch one or two from the neighbor's tree. I'm sure he wouldn't mind, since he's given me some in the past. I just checked, and there are a bunch hanging on the tree. I guess the frost didn't affect them.
That is seriously awesome, @Diane Lane ! I wish I lived where these tropical kinds of fruit and trees grow like you and Frank and Ina do. We have a small potted lemon tree and also a small potted orange tree; but they can't really grow much in the pots and they have to be brought in all winter. Kroger had chickens on sale for 79 cents a pound, so we got a whole chicken and I marinated it with herbs and some balsamic vinegar marinade that I had, and it is now in the Ninja cooker and smelling awesome . I also made a quart of fresh blue cheese dressing and a quart of thousand island dressing. I made some ranch the other day, but will have to make more of that soon, too. So, chicken and salad is what's for dinner today, plus a sweet potato for Bobby. Edit: The chicken was delicious, and I made some low-carb pumpkin cheesecake with whipped cream for dessert. We are happy and contented tonight.....
Since the temp is in the 50's, got the grill going for Bacon, Mushroom and Swiss cheese sausage from Costco. Philly style rolls with a topping of green pepper and onions. Winter...not here in the South! (yet)
By the time I got back from helping my daughter last night supper was a roast beef sandwich with pepper jack cheese and a tomato slice.
Yum, this thread always makes me hungry and gives me ideas of things I want to make. I'm finishing up the chicken, rice and peppers tonight, then will have to figure out something for tomorrow. I have chicken breast patties and frozen fish fillets in the freezer, and it will probably be one of those, unless I need something quick, in which case I'll make nachos.
Grilled steak, cheesy buttered potatoes, green beans with bacon and onions, and corn. And it's all yummy!
Tonight.......burgers (perhaps on the grill since our high temp today will be 80 and corn-on-the-cob. Oh, can't forget the Bud Light. That 80 degree mark will be gone by next week when we go back to a normal 65. And, just think, in a year or so, we will be leaving this kind of winter weather to go back to eastern Colorado. Oh well, some like Florida, while others don't.
I've got Pollock fillets in the fridge that I'm going to cook up for supper. I think I'll make some mac and cheese to go with it, and might also cook up some broccoli and cauliflower as a side. I haven't had lunch yet, and might just have some soup for that. I'm still battling the congestion, and hot soup might help to loosen it up.
For Trump's Inauguration celebration we are ordering from Chili's for supper today. My Honey will probably have the classic sirloin steak or the half rack of baby back ribs with spicy garlic and lime grilled shrimp while I will have the margarita grilled chicken breast and grilled shrimp with our sides being loaded mashed potatoes and steamed broccoli. We always get our favorite Chili gift cards for Christmas gifts...so this is a great day to use one of them to celebrate Trump's swearing in.
I'm celebrating with a Lean Cuisine Pizza! It's 340 calories and I usually limit my calories to 300 tops per meal...having an extra 40 calories in honor of the President and the First Lady. I can be as thin as she is but I'll never be that tall! . Or young, or as good looking and on and on...
Papa John's Pizza today for us....and TV marathon of Law & Order SVU! The Inauguration and worrying during the whole thing that President Trump was going to be assassinated just plum wore me out so we are chilli' out this weekend and letting others do the cooking for us. That's why I love receiving food gift cards...they are perfect for times like this!
I wasn't worried about him being assassinated, although when they were outside walking in the parade that thought crossed my mind but I'm sure secret service had it covered. I do feel like splurging with calories again though....if it's not pouring I'm thinking of going out to get an In-n-Out Burger with fries! It's been pouring and very windy in California...even Obama had to be diverted because of weather yesterday.
I went shopping Friday and picked up a fried chicken while I was out, Yesterday, I made some deviled eggs to go with the leftover chicken, had a serving of cottage cheese too. We've been snacking on nuts and dried fruit.
Today our favorite next door neighbor was in from his wintering in Florida so I baked a stuffed and cajun seasoned pork roast, some yellow rice with rotel and fresh bell pepper, fresh spinach, and mixed pinto and navy beans with bacon bits. And since I had enough ripe bananas I made my banana bundt cake with chocolate chips for dessert.
