Today smothered sirloin pork steaks with gravy, rice, pinto beans with jalapenos, and broccoli, cauliflower, and carrot medley lightly buttered.
Hamburger patties in the contact grill, potatoes and onions fried in bacon grease in the cast iron skillet and some leftover great northern beans. For a later snack: homemade vanilla wafers some of which were used to make a fruit cocktail pudding.
It seems only a few of us eat meals these days. We took a package of fish from the freezer ( bass and crappie) That we caught last fall. I think we've only got one package left. I hope the fish start biting soon.
Yesterday I bought this really nice chuck roast. It's to big for just the two of us so what I'm going to do is cut it in half and make a smaller roast with one half and cut the other half into stew meat chunks. My Honey brought home two free really nice and meaty soup bones from his job a few days ago so some one of those and some stew meat will go to make a nice soup for us and I will make crock pot chuck roast and gravy with my smaller roast half. I love a good chuck roast. Winn Dixie used to have the best cuts of chuck roast to me and they often offered buy one, get one free sales of them. But there is no more Winn Dixie here where I live and I don't often find a really nice chuck roast at the other stores.
Last night I had Pine nuts, & Spinach Farfalle with just a tiny drizzle of EVO Tonight I had gluten free battered fish, and chips... ...oooh my goodness I haven't had that many carbs in ages, I was full within 2 minutes...
Yesterday day I spent most of the day making dried navy beans with a ham bone left over from our Christmas gathering. I also made two banana bread bundt cakes...one with mini chocolate chips and walnuts and the other with cinnamon. Rice and baby spinach (because I didn't have any cole slaw mix) rounded out the meal and desserts I shared with two of my daughters. Today I am going to take the rest of the chuck roast and add some potatoes and baby carrots to it which will give us just enough stew to fill our bellies.
I made lentil soup yesterday and only had a little bit of it since I ate too many potato chips. Will eat that today. That's my plan so far but it may change....going to Trader Joe's after my physical therapy. Besides fixing my frozen shoulder it's also near Trader Joe's and my bank. So it had some good things going for it.
