A friend gave us a bunch of cucumbers, so last night, I found a recipe for some quick refrigerated bread & butter pickles, and made some of those. Bobby and I tried a few this morning, and they are already good, and should get even better as they sit and the flavors marinate in.
I made a veggie cheeseburger deluxe for my lunch, and that will probably be my main meal for today.

We have cucumbers ready to pick and three grandkids here for the week, so it will be spaghetti and salad tonight, I suspect. Lots of lettuce and other greens, too.

Fresh Sockeye (red) salmon from a local stream, fresh cucumbers and tomatoes from our greenhouse, coleslaw from a freshly-harvested cabbage from our garden...yummy! We only have about a month of this abundance, so we have to appreciate it!

Tonight the plan is a salad, fish and a side of broccoli.

The fish is one compartment of this frozen entree from Stouffer's.

Tomorrow night I'll have the mac & cheese compartment with leftover broccoli and a salad.

    Easy peasy lemon squeezy, LOL!!!

Early dinner/late lunch for me. We are back from the fitness center, and I was ready for a real meal. My friend , @Joyce Mcgregor , is here visiting with me this afternoon; so I made veggie-cheeseburger deluxes for us. Now we are both full, and even little Miss Twiggy (her dog) had some of the veggie burger and enjoyed it.
Since I do better when I do not eat late in the day, this will be my main meal, and I will maybe have an apple or small snack later on if I think I am hungry again.

I usually eat dinner at 3PM....since I eat breakfast at 4 am....lunch is around 10 am.

I never eat anything after 5 PM.

Today I had 5 Trader Joe's fish sticks and a light probiotic yogurt for lunch.

Ive lost a few lbs on the amoxicillin. 2-3 lbs.

Tonight will be my last dose.

@Chrissy Cross Amoxicillin is a fairly potent antibiotic. Might I ask what it's treating?

For dinner I just made some tuna salad. Will eat it later.

Today looks like a fish day for me and it's not even Friday:)

What's for supper? I wish I knew. Had a smoothie last night. Don't know what's on tap tonight if anything; maybe left overs.

Only way I wouldn't have A/C is if my power went out and if that happened I couldn't use a fan...unless I found a big one that was battery operated.
