    This has been my go-to Chicken Salad recipe for the longest time. The carrots are a nice addition.

    Chicken Salad


    2 cups chopped rotisserie chicken, skin removed

    1/2 cup diced celery
    1/3 cup diced carrot
    1/3 cup diced red onion

    1/2 cup mayonnaise
    2 tablespoons yellow mustard

    1 teaspoon celery salt
    1 teaspoon granulated garlic
    Pinch of paprika
    Freshly ground pepper

    Another Version~

    2 cups chopped rotisserie chicken, skin removed

    1/2 cup diced celery
    1/3 cup toasted chopped walnuts or pecans
    1/3 cup diced red onion

    1/2 cup mayonnaise
    Some green grapes, halved

    2 teaspoon Tarragon

    Freshly ground pepper
    Salt to taste

    I like raisins, shivered almonds and a little curry powder or paste in mine.

    Dang that autocorrect! I do keep a package of them in the freezer, so I guess they'd be shivering in their slivered state.

    I didn't even notice! I keep a pack in my freezer, too, mostly for green beans.
