    He's OK. But given that everything he does is on smokers, his range of foods is pretty limited.

    He not only does smokers, but about every type of grill you can imagine. He also does what he calls "Cave Man" cooking directly on the coals--what we used to call "steak throwing"

    I have seen him cooking on grills (like The Big Green Egg), but not directly on coals. Nor have I ever done it/tried it/seen it done.

    In college we used to go to the college retreat and have steak throws and drink beer. When we included women in the party, we found they couldn't handle an all meat meal, so we had to include some kind of starch or veggie. Once women were there, we used an set of bed springs instead of just throwing the meat on the coals directly. Either way works, but cave man style on the coals gives you a sear you cannot achieve any other way.

    Here is an example. I usually didn't use pepper as the pepper just burns when it hits the coals but perhaps it give some kind of pepper smoke. I added pepper after taking the meat off the coals. I probably wouldn't start with an expensive cut of steak for the first try. You can also put some veggies directly on the coals, such as peppers and tomatoes, but not delicate vegetables. Potatoes I protected with foil or clay mud.

    I'm gonna try this. I sometimes use that sous vide machine, which requires a sear afterwards to impart flavor. Most of the ways I try (cast iron pan/grill over coals) seem to cook the steak or chicken further. And I probably wouldn't need a full bed of coals to do this. (And I use a chimney, no starter fluid.)

    ps: Bed springs? :D

    We always used a campfire, but if you use charcoal, use "natural charcoal, not briquets in order to avoid the binders used in briquets. Bedsprings to provide a large surface for 10 to 15 participants.

    Not really ,most Aussie cooks are now promoting high carb fast food types of dishes taco / burgers types of foods / pasta / rice apart from some added lettuce / tomato / cucumber, at times most meals don’t seem to add / promote much in the way of veggies .

    Or sometimes……. I say to hubs I’ve added up what it would cost for a dish the cooks are making and it would be way out of budget for me …..and not very appealing to me / us
