I was reading over the Fuddrucker's bun recipe and it doesn't seem much different from most other bun recipes (except it makes a LOT... 6 cups of flour??? Yikes) The next time I make buns I'm going to shape them thinner to begin with. I have learned that the bread recipes that include milk are usually a fluffier end result. Also, a brushing of butter on the tops when they come out of the oven will keep them softer longer.
Oh, and when I went for my checkup yesterday, I have gained 4 pounds since February. Guess I'd better hang up my measuring cups for a while.
I believe milk added to any bread dough will make it softer, I say that because many years ago a very popular pizza place which had a unique soft crust, according to the owner it was being made with milk rather than water.
We're not gonna talk about weight. And I agree about shaping the buns thinner. But they're still gonna be pretty dense.
John, The photos of your breads and the Buns are incredible, you're an amazing bread maker. Back in the late 90s I Made bread using a bread making machine I never did it by hand. I'd add the ingredients Set the machine for the time I want the bread done in the morning, we'd wake up to the smell of that delicious fresh bread. The machine came with a recipe book and one of the recipes was for honey bread which I'd occasionally bring to work, it was always a hit.
Machines are great, aren't they, Tony? I've commented elsewhere that I wouldn't make any of this stuff without my stand mixer.
My daughter had a bakery/ Cafe which she had to close about 6 months ago due to covid she couldn't get help, she had one of those Hobart stand mixers, powerful machine.
I have a loaf of soft white bread proofing. Trying to keep it to one loaf a week. Also have some ripe bananas so I'll make a banana bread, too.
Sounds good. I steam my banana bread in the crock pot in one of these: The extended cooking time really makes it flavorful.
I have to say, "steamed" bread doesn't sound very appealing. Is it gummy? I like moist sweet breads but I also like a nice sturdy crust.
