Lately, ice cream has been on sale often at our major stores, Kroger and Safeway. My wife has sampled many flavors and types, hoping always to find a "low-carb" variety, which usually reads "reduced sugar".

What I find disconcerting is that virtually every type, brand, and flavor contains some variety of "gums": 4 or 5 different kinds. What the hell does ice cream need gum for, in it? Can one buy genuine, old fashioned ice cream without such added shit in it?

    What brand would that be?

I went to look at the ingredients for Breyers, and their ice contains gum(s). I am shocked. That's not what they advertise.

I bet independent places would make ice cream without gum in it, but I'm not sure you could get the low-carb you are looking for.

He's talking about things like guar gum, xanthan gum, and others. I believe they are used as thickeners, and keep ice cream from melting so fast.

I once bought some store brand low fat ice cream and decided to throw away the rest of it. Put it in the kitchen sink and it wouldn't dissolve. I had to run hot water over it.
