You ARE grate! My daughter left a bag of grated cheddar and it didn't mold or anything for a long time and I actually used it on pizza or whatever to use it up after a while. Not sure what preservatives are in it but it definitely lasted moldless for longer than my cheeses after cutting.
As you probably know...if it was pre-grated, they toss it with cellulose to prevent the strands from sticking to each other in a big gummy mass, and to absorb moisture. Perhaps that coating inhibits the growth of mold.
My son and I love those cheap iced oatmeal cookies from Family Dollar. They're so hard we'd break our teeth on them if we didn't dunk them in milk, but that's what we do and they're perfect for that. We call them sawdust cookies.
There was once a bread--very high fiber and no calories. It was popular with dieters until it was discovered that it was made from sawdust, then every one stopped buying it and it was pulled.
