Low Carb: What Are We Eating?

    Yesterday we went to Sudbury and naturally we went to Walmart where I bought a BBQ chicken..
    There is enough for us to have another meal from that dead bird..

    Now, I still have some meatloaf leftover from a few days ago which might be supper tonight.. I will make a sauce to go over it to make a difference.. Most likely a mushroom, onion sauce.. The BBQ dead bird will be supper tomorrow night..

    I bought some clementines, but they are very small and not very sweet.. That's OK as I will peel a few of them, section them, put them in a bowl with a can of pineapple tidbits with the juice, sliced banana, some blueberries, strawberries and we will have a fruit salad...

    We always enjoy sipping something warm after a meal.. it aids in digestion and it gives us some time to simply chat.. A pot of tea is always welcomed as we sit in the living room away from the table..

    Things are back to normal cooking and eating as it was before my wife had Salmonella poisoning..
    I made fish, fillets of Tilapia, lightly breaded and pan fried in butter and EVOO..
    Lemon juice on them while cooking..
    A salad with my own dressing...... She still seems to have trouble with mayonnaise..
    Stewed peaches..
    Pot of tea....

    I made a meatloaf using minced turkey.. It was simply delicious..
    There is enough for another meal for us..
    Baked potato... pureed carrots with herbs..
    Stewed peaches with heavy cream..
    Pot of tea........

    First before supper, a glass of .......... Eggnog...... boy is that stuff ever rich..!!!!
    Chicken drums on the BBQ..
    Baked potato... steamed string beans served with sour cream..
    S/F jello with heavy cream..

    Again a glass of that awfully rich ... Eggnog...
    FISH !!! Fillets of salmon cooked in a pan with lemon ...
    A salad.... Baked red potato
    Sliced peaches with some pineapple bits as well..

    Christmas dinner.........
    We went out to our local legion who put on a glorious Turkey dinner for those that are basically alone.. Many from our village came out to have companionship during the Christmas meal.. Being alone today isn't a good thing..
    The dinner is put on by one of the local churches and there is absolutely NO charge and as a matter of fact, they give away to everyone a present.. They also give you a container to take home of any of the leftovers of turkey and all the other stuff..

    I have been using the BBQ almost every night lately..
    Turkey sausages last night, my minced chicken burgers, B/S or bone in chicken thighs, chicken drums, chicken legs have been what I have been making lately..
    A baked potato seems to go well with most meals.. A salad with fish is also good..
    We eat fish 3 times a week..
    Not always a dessert....... BUT ,.... always a pot of tea after a big meal...
    Something warm after a meal aids in digestion.. We don't drink carbonated drinks at all..

    Steamed broccoli, baked potato, sliced tomato..

    Burgers on the BBQ... My homemade chicken burgers frozen on the BBQ.. They are quite big which means one burger is a real good meal.. Never a bun, just the burger..
    Even if we are in the midst of a major snow storm, it doesn't stop me from using the BBQ as it is under the balcony upstairs and it is protected from snow and rain..
    Baked potato... Steamed broccoli... Steamed cauliflower..
    Frozen blueberries with heavy cream..
    Pot of tea............

    I made a meatloaf today using minced chicken.. As usual, it came out delicious..
    Pureed carrots with a hint of mint, peas, and sliced tomato..
    Pineapple pieces..

    We went food shopping yesterday and by the time we finished all of out shopping, we were pretty out of it.. I stopped into our local Wendy's hamburger joint that we had coupons for and we each had a burger meal instead of going home and unloading, putting away the groceries, and then cooking supper... We don't do that very often, but it was a treat for me to not cook a meal.. Instead of the French fries, we took a salad instead.. With the coupon, it came out to be a cheap meal...

    Yes I still have some meatloaf left over from the other night which will be supper tonight..
    I will make some sort of a sauce to go over it to make a change..
    A baked russet potato for sure as well as another vegetable..
    Always a pot of tea after a big meal..

    FISH ... Fillets of haddock lightly breaded and pan fried in butter and lemon juice..

    I made salmon patties for supper.. something I don't make often, but we enjoy it..
    I took a large can (415g) of salmon, drained it, took out the bones and skin, mashed it, added 2 eggs, diced onion, dill, salt and pepper, and some bread crumbs to thicken it up.. Made 4 nice patties and then fried them in butter till golden..
    Baked potato, peas...
    Diced pineapple..
    Pot of tea..
