Experiment I tried once I only buy sauerkraut once a year for good luck on New Years Day. Had left over sauerkraut and left over juice (vinegar and sugar) from pickled beets one year. Drained the kraut and poured on the beet juice. Let it sit a day. It was good. A nice combination of sweet, sour, and salty. It's pretty, too. I guess you could use it as a condiment, like cranberry sauce?
