Well try some in your scrambled eggs. And maybe toss in some cheese. And top with salsa. You could have a pickled egg with this, too.
I think I'll stick with the poblano peppers next time. These eggs are darned good. Way better than any that I've ever bought in a grocery store or gas station.

Those look like what I always considered to be pickled eggs. I always thought it was a good way to make use of the brine from pickled beets once the beets were gone. They used to serve them in the taverns where I grew up.
Yup. Right next to the jar of pickled pigs feet that had "G. Washington" written on them and those Red Hot Vienna sausages. I used to hang out at the American Legion as a kid. At least the Slim Jims were edible.

I want some more pickled eggs, but I'll have to go to the store for them because my wife is complaining about the price of eggs, as if they are affordable for every other purpose, but it's a waste of money to pickle them. Women!
