The cabbage that I had in the fridge was getting old, so I made a quart or so of sauerkraut this morning. When we went to Aldi’s for eggs and fresh veggies, I got more fresh cabbage, and made one of the cabbage pies for brunch. Instead of onions, I added a small grated carrot. This time , I added cheese on top, since it was a brunch; but I have also made it without cheese and you can add butter and syrup or jam and eat it like a regular pancake. Cabbage is such a healthy food, and I enjoy cabbage, but never thought it might be good in a breakfast pancake. This is such an easy meal to make and enjoy just about anytime ! Great minds think alike. Bought cabbage today..plan on oven roasting some to go with fried catfish tonight.
