Well... considering I'm in the middle of still another storm this is all I can offer to the party tonight. There's a few inches of snow already, and then ice will be added on top of it by morning.
A pineapple adventure in Africa. I was working in Accra in Ghana and visited a number of producers and manufacturers to see if we could assist with any IT stuff for fair trade. One of the places I went to was a fruit farm. I was sitting with the manager and discussing things when a chap came in with a tray. Ah, I thought, tea or coffee. Wrong. What we got was fresh pineapple, freshly cut. Absolutely fantastic. I had trouble concentrating on the meeting. Living in the UK, tropical fruit is a bit weary by the time we get it. The fresh pineapple was a revelation.
That sounds great, @Tom Locke ! I get "fresh" fruit mixtures from the produce department of my grocery store, but trouble is that they're not truly "fresh" at this time of year. But I keep getting them because I like fruit. The blueberries in the mix are bitter, the watermelon totally tasteless, the cantaloupe hard and "green" tasting... but that pineapple.. always delicious even though not completely fresh.
Here's a simple way I like to make Pineapple Right-side up Open faced bagels. Place juicy pineapple slices (in can) on tray. Sprinkle each with 1/2 Tb brown sugar. Toast in toaster oven 5 min. @ 450. Lightly toast plain bagels. Spread with apple butter or cream cheese. Place pineapple slices on bagel halves. They're good with Hawaiian pizza.
