I'd love to pick mushrooms, but I have an absolute certainly that I would either end up being carried out on a slab or sitting in a police cell charged with attempted murder. Still, we are approaching the raspberry season and I know I'm on safe ground there.
I pick and eat the wild berries at the local park/trails. They're yummy, and free is (almost) always good!
My daughter and her little boy live with me and she and I take turns cooking. It is her turn tonight and she is roasting a chicken with cornbread dressing, gravy, and some kind of a green vegetable. It is always nice when it is her turn to cook. I get tired of eating my own cooking so it is a treat every other evening to get to see what she comes up with. The house smells so good right now.. something about the smell of roasting chicken. Yum. Tomorrow night I will use the rest of the chicken to make chicken egg rolls,,, I bake them in the oven so they are not so greasy.
Mmm, chicken egg rolls sound yummy. Egg rolls are on my list of foods to try making. What type of wrappers do you use? I was looking for spring roll wrappers last time I was at the store, but they didn't have any. It's nice that y'all take turns. I agree, I get tired of my own cooking. Sometimes a friend/neighbor and I share extras, that way we get to sample something different than our usual cooking. @Richard Paradon @Tom Locke I for sure would not eat any wild mushrooms. I can barely tell one flower from another, let alone safe from poisonous mushrooms! I made lentil soup last night, and it should be even better today. I'm going to make cornbread muffins later to have with it, yum!
About a month or so ago, the mini store downstairs closed and now has been rented as rooms so the community table where we used to share foods is gone. Sad, but it worked out pretty good for me. The new community table, although a lot smaller is right outside my front window and if I am home, there is always a plate for me. Yesterday, I had some kind of spicy fish soup and fish cake with rice. I am not overly fond of fish, but it did taste pretty good and was healthy (is that a bad word today)!
My day to cook. I'm making fried burritos, tortilla chips, guacamole, and opening a can of refried beans. I saw a video on you tube a couple of months ago and finally learned the proper way to fold burritos.
I really like soups and Chineese food. Very easy to make are Spring rolls, maybe you should try doing those? You can make them with vegetables or meat (chicken preferly) or with both of those ingredients. http://www.foodnetwork.com/recipes/fresh-vegetable-spring-rolls-with-two-dipping-sauces-recipe.html#!
http://www.food.com/recipe/caramelized-baked-chicken-legs-wings-145038 and http://mexican.food.com/recipe/authentic-mexican-roasted-corn-on-the-cob-206134 is what's for dinner tonight, with biscuits, then I'll make the corn chowder with the leftover corn, probably tomorrow.
That sounds good, Diane. We had shrimp stir-fry with vegetables from the garden. Blackberry cobbler and ice cream for dessert.
OMG that sounds amazing! I love shrimp stir-fry, and blackberry cobbler sounds declicious. I'm sure the fresh veggies were delectable, too! I was actually so tired after I cooked that I put it in the fridge and haven't eaten it yet. I'll have it later, with fresh fruit for dessert, unless I get around to making something sweet.
I ended up getting busy with company, so didn't have time to make the chowder. I had considered making corn pudding instead, but ruled that out, since I used savory spices when making the corn, and I prefer my corn pudding on the sweet side. So, I've changed my mind, and I'm going to use the roasted Mexican corn to make a corn casserole, instead. I'm going to tweak the recipe, of course, as I always do. I don't have sour cream on hand, but I do have onion dip, so I'm going to substitute about half that and half cottage cheese for the sour cream in the recipe. http://www.foodnetwork.com/recipes/paula-deen/corn-casserole-recipe.html
Our housemaids picked tamarind flowers this morning. That will serve as flavoring for the chicken soup dish for dinner tonight. The tamarind flowers will be boiled with moderate water and salt to taste. When the broth tastes okay, the chicken pieces will be mixed in the boiling broth and be cooked until tender. But before that, the vegetables should be included - water spinach and okra (lady finger). That dish is called Sinampalukang Manok that means Tamarind for sampalok and Chicken for manok. It is the favorite dish of people in the provinces that are near Metro Manila. Their usual chicken are those chickens roaming in their yard.
I'm not familiar with tamarind, although I've heard of it. Here's a link, in case anyone else would like to know: http://www.huffingtonpost.com/2014/10/20/tamarind_n_5999376.html
