For some reason, I decided creamed chipped beef on toast (SOS) sounded good today. I had a couple of these in the freezer... So I heated one package up in the microwave and made a piece of toast. It wasn't the worst I've ever had, but I wouldn't drive across town to get it.
Salmon Eggs Benedict with Truffle Fries, eaten in the dining room of an inn built in the 1880's with a stunning view out over the Blue Ridge Mountains. Then we went to a brewery to sit in the woods and listen to a good bluegrass band and of course indulge in adult beverages. I can hear my arteries slamming shut, my liver giving up the ghost and several thousand brain cells singing the Doxology and I need to take a nap. Later....
I'm thinking I may order pizza later, so lunch was just a granola bar, plus all my supplements. And orange tea.
Haven't had lunch yet here at almost 3:30 but i thinlk I'm having a hamburger patty with a small salad, french dressing and a fe pork & beans. Maybe a think slice of white bread and a small glass of mineral water. Maybe a few red grapes for dessert.
I've made homemade a number of times with the cheap Buddig packaged shaved lunch meats: I made it once the traditional way: The dried beef was nasty. Buddig was way better. As you said, Stouffer's fills the hole. I think I have a couple on hand for those lazy evenings.
I went grocery shopping. Food Lion has a selection of homemade subs & sandwiches that are very good (I keep forgetting to ask if the sub rolls they use are available off-the-shelf.) Every once in a while they have Chicken Salad Sandwiches on small rolls made with leftover rotisserie chicken. They had some today so I grabbed it. It's a 2-pak for under $4. I'll get 2 lunches out of them.
I have this long-term attachment to Buddig. Years ago they ran a promotion where you bought 5 packs and you got a free 45RPM record. The records were on a display next to the meats...it was instant gratification. I got a Jefferson Airplane record, but I don't recall the song. This was the mid 60s. I've tried that dried beef and done the soak/rinse thing, and it's just nasty tasting.
