We had to go into the area of town where the Farmer’s Market is at this morning, so we stopped by to see what they had. The large market is usually over the weekend when there are more sellers; but there is an Amish section that is open pretty much every day.
We got some fresh (and delicious ) tomatoes and also some cucumbers.
They had strawberry fritters, and we have never tried those before, so we got one and Bobby and I split it, with our coffee.

So my lunch is fresh tomatoes, cucumbers, and corn on the cob.

I did, or at least I had another sliced tomato and the other half of the cucumber that night an hour or two before bed. Now that i do not have the addictive food cravings, it does not take me as much food to feel satisfied.
It made sense to me when I read about some foods stimulating the dopamine receptors in our brain, so we react the same as we would to a drug that stimulated dopamine, and what we perceive as being hungry, is actually drug withdrawal from the addictive foods we eat.

I used to literally crave a pizza and we had it at least once a week. Now that I am not eating cheese or dairy products, that craving went away. I still think that it would taste good to me, but I don’t feel like I need one anymore.
So, the meal of corn and tomatoes was plenty for me for lunch, and the extra tomato at night was all I wanted to eat.

For that brief period of my life that I went meatless, it took a while to change from needing to feel bloated (caloric-dense foods like animal fat) to just feeling healthfully satiated. And our bodies adapt. At some point we stop producing the enzymes required to break down those food types that we are no longer eating (meaning if you try to go back it will be a painful transition.) Western diets are [literally] a killer.

Does that salad have lime juice? If not, squirt some on it. :D And are those the roasted poblanos?? How did the peeling go?

Yeh, it had 2 TB of lime juice and 2 TB of olive oil as the dressing. It called for squeezing lime wedges on top at serving but I ran out. It really needs another poblano and maybe some chili powder (there's none in the recipe.) It's very bland. Consider all the ingredients in it (shallots, garlic, scallion, fresh cilantro, etc) I'm disappointed.

The peeling went OK, but since I cut these into strips and did not need to leave the peppers intact for stuffing, I was able to lay them flat and scrape the last bits of peel off with the edge of a knife. I learned that I'll never do chili rellenos if this is part of the process.
