I've had meatloaf on my mind for a few days so today might be the day! I still haven't decided what's for dinner but I have a bunch of fresh produce coming in a couple of hours so I can get inspired.

Meatloaf is mixed and in the oven. I got fresh green beans in my grocery order so I will saute those and make creamed potatoes. I also sneaked in a 4-pack of Hawaiian rolls. YES! :D

I ate out for the first time since The Virus That Roared hit. I drove to Charlottesville to get ribs at Appleby's. I like to eat late, so missed any rush they had. It's interesting eating out alone, because the servers will sit down to chat, whereas they would never interrupt a couple. That's been my forever experience.

I'm beginning to realize that I used to eat out more for the social interaction than any other reason. Maybe I should get a dog.

I dropped over $30 for my meal and it wasn't all that great...although I do have enough for another dinner. Now I see how I saved enough over the past 5 months to buy all these new kitchen appliances. I doubt I'll be eating out much any more. Too expensive, the quality isn't really that good, and I don't like the current experience.

    -Salad
    -Ribs
-Fries (baked potatoes no longer on the menu)
    -Fudgesicle & coffee at home

So I asked the hubby what sounds good for dinner. He replied "meatloaf sandwiches" and was quickly overruled. :D His second choice is beef and bean tostadas, so that's what we're having. I have some ripe avocados so guacamole is also in my immediate future. Yaaaaaasss.

The better half has suggested meatloaf sandwiches again today, so I guess that will be dinner. I can eat almost anything if I have a beer with it.

Or would Mr. Gallagher prefer a sandwich?

The meatloaf has onions and bell peppers in it. Mr. G. wants a sandwich but I might go for some melty cheese.

I borrowed a smoker a while ago and made a bunch of stuff in it. I had a surplus of ribs and started making quesadillas from them. I brush one of the tortillas with a little bbq sauce, throw on the picked meat and some shredded cheese, and put it on the griddle.

It's really really good. You don't often get cheese on a bbq sandwich, and it goes so well with the smoky flavor.

I had tried putting coleslaw on it so that it was more than just a meat sandwich, and while it wasn't bad, the warm slaw wasn't real good, either. Much better served cold, on the side.
