A cold windy day here has me on the verge of a whine, so I changed to a comfort supper, grilled cheese, and spicy tomato soup. I had the planned potato bread, bean, and cheese thing for lunch.
We had planned on steaks from Outback but when I got done at the doctor I just wanted to come home. We drove through a Wendy's and had a romantic Valentine's hamburger. Two burgers, two fries, two cokes... $24. What??
I had been eating out pretty often, just to get off of the compound and to make sure I could still speak the language. I went to my favorite Mexican restaurant last night, and when the tab came to $30 just for me without alcohol (and I took no leftovers home), I decided that eating out might be a twice-a-month thing for a while. Sorry you missed Outback.
No biggie about Outback; it was just convenient for pickup but we can do that anytime. I noticed on my grocery order that a loaf of regular, brand-name wheat bread is $5 a loaf now. What on earth?? I thought butter and eggs were out of sight, but this tops them.
I cook my rice in chicken broth so it isn’t so, blah. But you can cook it in plain water, as well. 2 garlic cloves, minced (3 cloves if they are small) 1 cup white long grain rice 2 cups chicken broth 1 teaspoon fresh thyme, or ½ teaspoon dried thyme 2 Tablespoons butter 1 teaspoon salt ¼ cup fresh parsley, chopped In a medium stock pot, add broth, thyme, garlic and salt and bring to a boil. Add rice and turn the heat to low and cover; simmer for about 20-25 minutes or until the liquid is absorbed and rice is tender. Stir in the butter and parsley. Serve.
I drove into the big city this afternoon and pigged on Chinese buffet for lunch, so dinner was a salad and cheese & crackers.
I'm thinking a pot of beans with cornbread and coleslaw on the side. It's a cold and dreary day and supposed to get colder through the afternoon. Chili sounds good, too, so I'll see what the better half thinks.
