Stew meat, cut up baby carrots, and asparagus, onion, and garlic all simmering in a little seasoned broth and wine served over garlic rice.
Beef and macaroni in the Instant Pot, mixed greens salad, garlic bread. I also have some ripe bananas so I might whip up some banana bread later.
My cousin is joining me for dinner tonight and is making a wonderful liver with onions meal, and all the trimmings. I am IN, love this meal
If you look on Page 422 of this thread you'll see that a couple of us share your organ obsession and had this meal just a few days ago. I've loved liver since I was a kid. I also like oxtail and tongue, although neither are as easy to find as they used to be.
@John Brunner Going to go take a look at page 422 in just a bit, if organ obsession is popular here, well then, I will let you know that we finished the liver dinner about a half hour ago, and there are even leftovers for tomorrow night! Oh me too! A liver lover all my life. I have though never had oxtail or tongue, still have a lot of livin to do I think btw, I prefer katsup on my liver, and the onions fried not too crisp but simmered with mushrooms, bits of bacon bits, garlic mashed potatoes, tender buttered snap peas, side of garden salad, a sip of Baileys for dessert.
My liver dinner menu is very much like yours. I had one friend who also lived liver. I'd call her whenever I was fixing it so we could enjoy the meal and judge the rest of the world for their poor taste. I shall pretend you did not make that katsup statement. Seriously??????
@Janine Coral mentioned poached eggs, and the seed was planted. I LOVE poached eggs. I would routinely have 4 poached eggs on toast as a midnight snack when I was a kid. I had a very late lunch yesterday and did not want much of a dinner, so last night at 11PM I made a couple of poached eggs on toast with bacon. They were especially tasty because I have access to local eggs.

Grocery delivery will include a rotisserie chicken. I'm making a broccoli/rice casserole and salad to go with it.
