I hate to say after seeing DB's picture of his dinner. We had hamburger steak with onion gravy, buttered new potatoes, corn on the cob, cucumber/tomato salad.
Today it's chicken green chile enchiladas, if I can manage to roll the tortillas with my gimpy thumb bandage. Side salad, too.
Today started with a flat tire right out of the gate and didn’t slow down much. Around dinner I was in the mood for light and easy Chicken thighs for Ms Coop and rainbow trout paired with a strawberry salad for myself.
Fresh pizza from the grocery store deli. I'm going to doctor it up with more veggies (it's pepperoni). I can bake it in the Breville oven and not heat up the kitchen.
The last of the Alaskan wild caught cod, but with spinach today. I already had my espresso ice cream.
Faye's Famous Chuckwagon Chili Sorry about the photos, but couldn't copy them from the card other than as links. I then had to use my cell to photo the photos on my screen that wouldn't open. I haven't figured out how to get the camera card to work like it did on my other computer. It starts with untrimmed well marbled and fatty brisket. The unhealthier the better for flavor. With all the ingredients added it smells sinful. Zek use to say it was erotic. He claimed it was cruel and unusual to have to smell it for 5 hours before it was ready. So now I wait till 1500 hours. That is 5 hours on simmer. It will be tender and delicious. Later cornbread slathered in real butter will create the ultimate chuckwagon style dining experience.
Daughter sent her dad an Outback gift card for Father's Day. He's having a steak and I'm having a prime rib sandwich with au jus. And margaritas.
