We usually only have one main meal each day, sometimes together, sometimes separately. Today I am trying out a new recipe for an eggplant and lentil vegetarian dish. I didn’t have potatoes, so am substituting some butternut squash, and I added a little brown rice to the recipe. It is cook now, smells good, so we just have to see how it ends up tasting. Edit to add: This turned out to be DELICIOUS ! It is a very different taste than what we usually eat, and has a lot of good vegetables and lots of fiber. I will definitely be making this again, and I really liked it with the squash instead of plain potatoes.
Today is our 32nd anniversary. We have no desire to be out and about,so we are having rib eyes, zucchini fritters, and scalloped potatoes , maybe something else
Garden salad topped with chicken tenders, bard boiled egg, bacon, and honey mustard dressing. Maybe a couple of jalapeño poppers on the side...and dinner rolls.
Applewood bacon tenderloin and my version of macaroni and cheese some leftover pinto beans with Flapjack cornbread.. tasty
2 scrambled eggs in real butter and Special K with strawberries. Cereal to me is snack food, but was hungary for something lite and different. It all tasted wonderful.
The high today is maybe 60, so I made veggie soup from our garden. Will have to use toasted Italian bread as out of corn meal until next store run - but still Bon Appetit
