Beth I wish I still could, but since I can't eat cornbread without a huge workout, I get to avoid the corn sticks, but will have to eat patties for lunch, Yummy. It took a while to clean those two pans, used very stiff brush, hope that will be the end of my recipe experiments.
I have done many of those "seemed like a good idea at the time" things. The good thing is, we learn not to do it again. I want to get my A1C back down into the normal range; right now it is in the "pre-diabetic" area and I don't want to go there if I can avoid it. I am actually feeling a lot better since I cut out so many carbs but it is hard to do.
I sure hope it works for you and you never a diabetic, its no fun, I'm in a constant fight with it, already have peripheral neuropathy from diabetes, and high bp gave me a stroke bringing it down too fast. No fun, I do try and stay active, maybe miss a walk a month, even in rain sometimes, lift weights, dance around. Sometimes I almost feel like crying when its time to get busy, but I'm not a cryer so I just go for it.
I totally understand that feeling. I used to be hell on wheels when it came to getting stuff done... just git outta my way. But now I get so tired after the smallest activity... so frustrating. I vacuumed the downstairs earlier and got totally beat.
I don't know what supper's going to be. The BH is over at his mom's place so he will probably pick something up on his way home.
Where we are right now for the next few days before heading home to stinking hot South Aust , the lady has an air fryer . I’ve used it twice to cook a couple of pieces of barramundi and they came out very tasty ( I made a bit of a marinade of lemon juice / grated rind / salt and pepper) it was enough as we’ve not keen in sticky / sweet sauces / marinades. Tonite I’m going tackle cooking boneless chicken thighs , crumbed with lemon herb flavoured panko crumbs… ( purchased with those extra flavourings in panko crumbs ) So I’ll be making a mess latter crumbing two lots as I had the chicken packed in a 2 meals pack in freezer From what I can see online you only need to spray a little cooking oil on crumbed foods before cooking in air fryer I’m just using up the last of our food before heading home in a few days time
Spaghetti. Made with angel hair. Found some sauce that comes in a quart jar. Called Michael's of Brooklyn Home Style Gravy. (Gravy? ) It's really sour. I like sour. Takes very little. I like that too. There was no angel hair on the grocery shelves for weeks. I thought they quit making it. It's back. I'll start hoarding it.
I've defrosted a lovely sirloin steak. I use a meat tenderizer that is basically papaya and salt which makes the meat even better. Dave will have a sweet potato. I'll have a veggie plate.
BH picked up a hamburger and fries for himself, and I decided on a low-carb wrap with leftover rotisserie chicken, lettuce and tomato. Then I had 1/2 cup of homemade yogurt with fresh blueberries.
