Well, tonight, we go to our favorite Mexican Restaurant for a tasty margarita and Mexican dinner. Tried a different Mexican Restaurant last Saturday night, that we were told was very good. What we found out is, just because a restaurant has a long waiting time to be seated, doesn't necessarily mean it's a good restaurant. And, just because a person is told by another person that the food is good, sure doesn't mean it will be good. There was a long waiting time and, as my wife said to me, "The meal wasn't good enough for the waiting time we had. We won't be back here again." So, tonight, it's back to our local, right down the street, Mexican Restaurant.
I'm still going through COVID rations here. Tonight is a casserole based on snipped up kippered beef from my freezer, lots of frozen peas, a little macaroni, and bulk cream of broccoli soup mix. Add water, pepper, and two slices of processed cheese. Very salty by my standards, but I have a big salad of mixed radish sprouts, cut up Roma tomatoes, carrot slivers, and some mixed greens. So the casserole will be lunch tomorrow too and the rest into the freezer to wait for a few days.
I know they aren't that good for you, so we only eat them 4 times a month a couple times a year. I'll buy them every few months for something quick and kind of a treat.
I just defrosted and cleaned out our freezer yesterday and got out some frozen food we need to eat soon. already cooked the bell peppers.
I used to like liver and onions, but my kids didn't like it, it got to where it wasn't worth the effort. Jake won't touch it, and he will eat most meat, including wild varmits.
I dragged 1/2 chicken and a ham bone from last christmas, out of freezer and made a nice stock for making pea and ham soup Did that Thursday ….let it set overnight to skin any fat off ..made Split pea / ham soup yesterday …..so had that last night …..and again an hour ago for tea tonite ( Saturday ) I always try to make a warm desert when having soup ….so I picked about 3 kg of apples( in total) that were on the tree … ( pink lady ) . that were very slowly ripening very slowly due to very cool summer ..stewed them with rhubarb and made nice fresh custard So we’ve had the same food 2 nights in a row …..and neither of us is complaining eating the same food again
pork tenderloin with mushroom gravy like sauce- cabbage, broccoli, peppers and potatoes cooked in oven with olive oil and seasonings. We is outta foods so off to town tomorrow to restock up- sigh such a chore
Our dinner was almost entirely from my gardens!! Except for the "hamburger steak," haha. I made squash, green beans, and a relish tray with cherry tomatoes, cucumbers, and banana peppers. All of it was fresh picked!
It’s spaghetti and meatballs for supper tonight here too! @Beth Gallagher And---- I have leftover meatballs and a container of sauce that I am hauling out of the freezer as well.
